この刺激食品は香味と辛味がすばらしい特色を持っているところから、成年以上の大人になると、たいがいはこれを好み、日常食膳に喜ばれていることはご承知の通りだ。実さんしょうの佃煮（から煮）はよく知られているが、実さんしょうも実山椒も味噌漬けとなると、あまり知られていないのではないだろうか。この点が珍しいところだ。

丹波たんばの朝倉山椒あさくらざんしょうというのは、古くから有名で献上品、あるいは大名の御用となって諸方へ出回り、ずいぶん珍重されたようである。当時用いたといわれる容器は五、六升入りくらいの壷で、今日骨董品として数万金で売買されている。

若実さんしょうを「辛味噌から味噌」に三年漬け込んだものは、酒肴としてはもちろんのこと、お茶漬けの副菜としてもこの上なしといえよう。さんしょうは若実、若芽（キノメ）でなくては価値がない。お茶でいえば、玉露にあたるような上等の新茶がよいのである。（昭和八年）
