      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-631-816">人は常識的には、太平洋へ注ぐ表日本の川の水温よりも、日本海へ注ぐ裏日本の川の水温方が低いであろうと、考えるにちがいない。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-816-1173">ところが、実際は日本海へ注ぐ川の方が平均高い水温を持っているらしい。このことは理学的にも統計的にも、何か責任の上に立って調べたわけではないから必ずそうであるとは断定できないが、私が多年、各地の川を釣り歩いてみて、裏日本の川の方が早く水が</seg><ruby type="furigana" rend="right" source="#source-1173-1188"><rb>温</rb><rt>ぬる</rt></ruby><seg source="#source-1188-1301">み、そして盛夏の候には表日本の川より水温が高くなることを経験したのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-1301-1579">水温と釣りには、切っても切れない縁のあるのは誰でも経験している。疑うというわけではないが、川の性質を知ってその川特性の水温を頭に入れながら釣りすることは、また楽しみのあるものである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-1579-2167">たとえば、手近の例が上越国境即ち白根火山の北方、信濃の渋峠を地点として東方へ走り岩代、上野、下野の三国境付近の尾瀬沼の東でつきる山脈の裏表は完全に、日本海へ注ぐ川と太平洋へ注ぐ川との分水嶺をなしている。この山脈の中央に他を圧して聳立する大刀根岳の雪渓の滴りを源とする利根川と、やはりこの山脈中の名山、谷川岳の北裏を源とする越後の魚野川の水温を比較すると、川が暖かい陽当たりに向いて流れるにも</seg><ruby type="furigana" rend="right" source="#source-2167-2182"><rb>拘</rb><rt>かか</rt></ruby><seg source="#source-2182-2232">わらず、利根川の方が水温が低い。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-2232-2540">また、越後の阿賀の川の支流只見川は会津の奥、即ちこの山脈の東端に位する燧ヶ岳の西南の谷から北方へ向いて流れ出すが、尾瀬沼の森林中に源を持って南方を指して流れいく利根の支流片品川の方が水温が低いのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-2540-2896">遠く加賀の白山の裏川から源を発する射水川、越中立山の西北から出る神通川も共に、日本海へ注ぐのではあるが、上の保、吉田、板取、揖斐の各支流を集め、木曾の奥から出てくる木曾川に合する長良川の方が、太平洋に向いているにも拘わらず水温が低い。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-2896-3324">まれに、平州に源を発する駿州の富士川、野州塩原の裏山から出る常陸の那珂川のように太平洋へ注いではいるが大そう水温が高く、北アルプスの西側、黒部五郎岳の峡谷から出る越中の黒部川は、日本海へ注いでいるが、水温が低いという川もあるが、これは私がこれから説く、川の性質の異例としておこうか。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-3324-3489">なぜ、日本海へ注ぐ川の方が、水温が高いのであろう。それは雪と、気圧と、地質の関係ではないかと思われる。日本の</seg><ruby type="furigana" rend="right" source="#source-3489-3513"><rb>脊髄</rb><rt><app type="base-text-variant" source="#source-3513-3582"><lem>せきずい</lem><rdg type="base-text"><seg source="#source-3564-3576">せきづい</seg></rdg></app></rt></ruby><seg source="#source-3582-4232">を東北へ貫いて、地勢を裏と表に分かつ山脈へは、毎年深い雪が積もることは誰でも知っている。そして、魚野川と利根川を例としてみれば、いずれの水源地方へも毎年同じ深さの雪が積もるのであるが、越後の山の方が、南西の山よりも早く雪が解けるのである。だから、裏日本へ注ぐ川の方が、早く水が温まるわけになる。関東平野から、小野子、子持両山の峡谷を遠く北方へ聳え立つ谷川岳の南西は、七月の末、土用に入っても雪渓をキラキラと望むことができるのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-4232-4534">だから裏山、つまり越後の方に面した方の側には、さぞ深い雪が残っているであろうと想像されるが、行ってみると案外である。越後の山の雪は既に解け、頂に近い所まで水田が開けて青い稲が真夏の風に揺られている。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-4534-4611">これは美濃の山、飛騨の山々へ行っても同じである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-4611-5076">どうして、裏側の雪が早く解けるかというのは、むずかしい問題であろう。私は、漫然と気圧の関係ではないかと考えている。同じ標高の山に積もった雪ならば、裏日本に面した土地が早く解ける。これは冬とは反対に、表山の方が初夏の頃には、東南の冷たい風を受けやすく、裏川は風陰になって気温が高いからではなかろうか。また初夏の</seg><ruby type="furigana" rend="right" source="#source-5076-5088"><rb>陽</rb><rt>ひ</rt></ruby><seg source="#source-5088-5615">は、北へ回る関係上、裏側にはげしく当たるとも考えられる。そんなわけで、裏日本側の雪は、表側のように夏の土用が過ぎるまで、いつまでもだらだらとは残ってはいない。初夏の頃に一度解けて流れ出してしまうのを例としているのである。地質の関係もあろう。概して裏日本は山嶺近くから耕地が開け、殖林が疎らである。従って陽当たりがいい、雪が早く解けるということになる。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-5615-5795">ところが、表山は概して雪が深いのである。これは場所によって岩質の関係もあろうが、初夏から真夏へかけて東南の雨風を受け、</seg><ruby type="furigana" rend="right" source="#source-5795-5819"><rb>頽雪</rb><rt>たいせつ</rt></ruby><seg source="#source-5819-6094">の状態を頻繁に起こすからである。頽雪が岩を削る力は恐ろしいもので、岩の凹みを削って谷となし、谷を掘って峡となし、永い年月働く自然の斧は、表日本側へ深い峡谷を刻んでいっているのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-6094-6438">谷が深ければ、渓を掩う樹木は密生する。樹木が多ければ、地肌に当たる陽の力は自然に弱くなって雪は夏遅くまで残っている。それが因となり果となって、一方はますます山が深くなっていくのに反して、裏は山が浅くなっていく傾向を持っている。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-6438-6644">だから、少し注意深い人であるならば気付くであろうが、概して裏日本側の水源は渓をなしているが、表日本側の水源は流れをなしているのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-6644-6805">結論というのも変であるが、陽当たりのいい地方の川と、悪い地方の川。ここに水源の高低が分かれるのであろう。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-6805-7176">それから、前段に耕地が山奥深く開けているということを言ったが、その川の流域に耕地が多ければ多いほどその川の水温は高くなるのである。昔から裏日本には水田が広く拓けていた。ところが表日本は冬陽当たりがよく暖かいにも拘わらず水田が少なかったのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-7176-7434">その意味から、富士川は表日本にあるのであるが、甲府盆地という広い盆地を持っているために、水温が高かった。釜無川は韮崎付近までは冷たいまま流れてくるが、盆地へ出ると急に水が</seg><ruby type="furigana" rend="right" source="#source-7434-7449"><rb>温</rb><rt>ぬる</rt></ruby><seg source="#source-7449-7712">んでしまう。笛吹川も、雁坂の峠の東を出て日下部付近までは冷たいが、石和へくると段々湯のようである。そして富士川は、鰍沢を出て再び峡谷に入るのであるが、流れは温かのままである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-7712-8009">那珂川もそうである。栃木県の塩谷、那須、芳賀の三郡に拓けた耕地から、広く浅く陽を受けた温かい水が絶えず注いでいては、他の川のように、いつまでも冷たい水温を保っていられないのは当然である。長倉の峡を</seg><ruby type="furigana" rend="right" source="#source-8009-8024"><rb>下</rb><rt>くだ</rt></ruby><seg source="#source-8024-8104">って茨城県へ入れば、一層水温が高くなるといっていい。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-8104-8163">この二川は、表日本の異例であろうか。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-8163-8523">黒部川は、裏日本の特例である。断層によってできた飛騨山脈の割れ目を、北へ流れる黒部川は雪が深いうえに、陽当たりの悪い川である。屈曲が多く谷が深い。そして水面を掩う樹葉は敷き詰めたようである。流域の耕地は、まことに少ないのである。水温の低い</seg><ruby type="furigana" rend="right" source="#source-8523-8544"><rb>所以</rb><rt>ゆえん</rt></ruby><seg source="#source-8544-8558">である。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-8558-9052">興津川は、鮎の棲む川として、太平洋へ注ぐもののうち最も流程の短い一つである。この川の流域も耕地が少ないのである。それに小さい川にも拘わらず、大河に似た相を持っていて崖が高く屈曲が多い。あのくらいの長さの川では、水温が高い上に、水質が悪く到底鮎など棲み得られるものではないが、この川は水温が比較的低いので、立派な鮎が数多く育つ。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-9052-9191">雪との関係こそないが、そして川の大小の差こそあるが、越中の黒部川と裏と表の好一対である。</seg></p>
      <p style="text-indent: 3em" rend="first-line-indent(3)"><seg source="#source-9191-9207">二</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-9207-9278">くだらない水温のことを、なぜ長々と書いたか。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-9278-9385">私は、水温と魚の質、殊に味との関係に深い興味を持っているからである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-9385-9715">鮎は、水温の高い川に好んで棲む魚である。静岡の安倍川や、小田原の酒匂川は、六月過ぎて水を水田へ引き上げる頃になると、川は枯れて水温は非常に高くなる。二十五度を超えて、三十度近くにもなることがある。三十度近くなると、もう</seg><ruby type="furigana" rend="right" source="#source-9715-9736"><rb>日向</rb><rt>ひなた</rt></ruby><seg source="#source-9736-9751">水と同じな</seg><ruby type="furigana" rend="right" source="#source-9751-9766"><rb>温</rb><rt>ぬる</rt></ruby><seg source="#source-9766-10062">さを持ってくるのである。鮎でも、鮒でも入れればすぐ死にそうな、こうした温かい川で鮎は盛んに水垢を食っている。時には、思いもよらない浅い場所で、友釣りに掛かることがある。温かい水を好むためであろう。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-10062-10634">だから水温の低い川へ遡らないかといえばそうでない。利根川は中部日本では、最も水温の低い川である。五月下旬から六月上旬、鮎の遡上の最も盛りだという頃、九度から十一、二度を往復している。銚子口や江戸口から、海で育った小鮎が淡水に向かう三月下旬から、四月中旬へかけては、雪解け水の出はじめた頃で、それよりも、もっとも水温が低いのである。それでさえも、小鮎は上流へ、上流へと遡っていく。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-10634-11176">そして、遡り詰めたところは、水上温泉の下流、小松の発電所の付近である。でなければ支流の片品川の吹割の滝の下流、岩室付近である。近年、上毛電力の堰堤が糸の瀬にできて遡れなくはなったが――。この付近の水温は、七月中旬から、八月中旬にかけて真夏の日中でも二十一、二度を超えることができない。また夕方は早く水から上がらなければ、慄えてしまう。それでも鮎は大きく育つ。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-11176-11200">この辺は、真夏</seg><ruby type="furigana" rend="right" source="#source-11200-11227"><rb>山女魚</rb><rt>やまめ</rt></ruby><seg source="#source-11227-11271">も一緒に棲んでいるのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-11271-11717">そんな冷たい水で育った鮎の味はというと、それは上等である。七、八十匁から、百匁近い大きな鮎であるにも拘わらず、肉はキッとしまって香気が高い。殊に嬉しいことは、水が冷たくなればなるほど、鮎の骨は柔らかになる。腹に片子でも持とうという成熟しきった八月末の鮎でも骨も頭もない。モリモリと頭から食える。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-11717-12464">だから、利根川の鮎は赤谷川の合流点付近から上流でとれたものを、一番上等とされている。鮎の産地のことなどには、あまり関心を持たない――ほんとうは、知っているべき筈なのだが――大日本料理人組合連合会の三宅孤軒君も、一昨年越後からの帰りに後閑で、キネマ界の利け者野中康弘君の友釣りでとった鮎をご馳走になって、その味と香気と肉の舌離れのあざやかさに驚いたのであった。鮎は、長良川と多摩川に限るように思っていたのに――鮎は、水温の高い川に育つと骨が硬くなるのである。先年、ある学者が、鮎の味は水温の高い川で</seg><ruby type="furigana" rend="right" source="#source-12464-12476"><rb>漁</rb><rt>と</rt></ruby><seg source="#source-12476-12649">れたものに限ると何かの本に書いたことがあるが、私はそれを読んで学者は学者らしいことを言うものだと、思ったのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-12649-12727">冷たい水を好んで棲む魚は、どれも骨が柔らかである。</seg><ruby type="furigana" rend="right" source="#source-12727-12751"><rb>山女魚</rb><rt>やまめ</rt></ruby><seg source="#source-12751-12757">も、</seg><ruby type="furigana" rend="right" source="#source-12757-12778"><rb>岩魚</rb><rt>いわな</rt></ruby><seg source="#source-12778-12784">も、</seg><ruby type="furigana" rend="right" source="#source-12784-12799"><rb>鱒</rb><rt>ます</rt></ruby><seg source="#source-12799-12985">の子も。――骨を除いて食べるようでは、こうした魚の真の味を知る人とはいえないのである。最近知ったことであるが、榛名湖で釣れる</seg><ruby type="furigana" rend="right" source="#source-12985-13009"><rb>公魚</rb><rt>わかさぎ</rt></ruby><seg source="#source-13009-13146">は本場の霞ヶ浦でとれるものよりも、骨が柔らかである。これも榛名湖の水温が低いためであろう。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-13146-13286">こう数えてくると、鮭科に属する魚のみが、水温と食味に関係があるようであるが、そうではない。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><ruby type="furigana" rend="right" source="#source-13289-13307"><rb>鰍</rb><rt>かじか</rt></ruby><seg source="#source-13307-13310">と</seg><hi rend="bouten 傍点 right" source="#source-13310-13346"><seg source="#source-13310-13316">はや</seg></hi><seg source="#source-13346-13643">も水温の高低によって味と骨の硬軟に密接な関係を持っている。殊に鰍は水温の低い川に棲むものほど脂肪が濃く、骨がやわらかである。那珂川や、魚野川、鬼怒川などに沢山いて、里の子供が鰍押しで春から夏にかけて</seg><ruby type="furigana" rend="right" source="#source-13643-13655"><rb>漁</rb><rt>と</rt></ruby><seg source="#source-13655-13732">るが、水温が高いためかどうも賞味できないのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-13732-13771">ところが、片品川の奥や、</seg><ruby type="furigana" rend="right" source="#source-13771-13792"><rb>神流</rb><rt>かんな</rt></ruby><seg source="#source-13792-14076">川のように遠い雪の山から流れてくる川で漁れたものは格別である。殊に利根川の薄根口から上流、真庭、月夜野、上牧にかけての鰍は肉に脂が乗った具合がとろりとして、舌の先で溶けてしまうほどである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-14076-14145">鰍は二月から三月へかけて、上流に近い玉石底の</seg><ruby type="furigana" rend="right" source="#source-14145-14166"><rb>矢倉</rb><rt>やぐら</rt></ruby><seg source="#source-14166-14456">石の裏に産卵するのであるが、水温が低くなって十二月半ばから、翌年の雪解水の終わろうとする五月下旬までが一番おいしいのである。柔らかくて頭も骨もないのである。水温の高い川の鰍は、そうはいかない。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><hi rend="bouten 傍点 right" source="#source-14459-14501"><seg source="#source-14459-14468">うぐい</seg></hi><seg source="#source-14501-14504">や</seg><hi rend="bouten 傍点 right" source="#source-14504-14540"><seg source="#source-14504-14510">はや</seg></hi><seg source="#source-14540-14836">もそうである。早春、水の冷たい、まだ瀬付き前の巣離れといった頃釣ったならば、骨がやわらかである。ところが水温が次第に高くなってくるから、河口に近い下流で釣ったはやは義理にも食べられない場合がある。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-14836-14965">はやと山女魚と雑居している川はまれではない。東京付近では、多摩川の支流秋川も、甲州南</seg><ruby type="furigana" rend="right" source="#source-14965-14986"><rb>都留</rb><rt>つる</rt></ruby><seg source="#source-14986-15294">の笹子川もそうだそうである。利根川では岩本から上流ならば、どこでも山女魚の釣れる所では、大抵はやが釣れるのである。もうこの辺になると、暑中でも水温が低いから下流では食えないはやも相当の味に食えるのである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-15294-15483">水上温泉の旅館と、駅売りの弁当では、はやの焼き枯らしを、煮びたしにして客に出したところが、大そう歓迎されたのである。しかし、</seg><app type="base-text-variant" source="#source-15489-15537"><lem><seg source="#source-15483-15489">そう</seg></lem><rdg type="base-text"><seg source="#source-15525-15531">さう</seg></rdg></app><seg source="#source-15537-15669">沢山はとれない。そこで苦し紛れに信州から養殖のはやを取り寄せ、利根で釣れたのですといって</seg><ruby type="furigana" rend="right" source="#source-15669-15693"><rb>誤魔化</rb><rt>ごまか</rt></ruby><seg source="#source-15693-15711">したところ、</seg><ruby type="furigana" rend="right" source="#source-15711-15729"><rb>蛹</rb><rt>さなぎ</rt></ruby><seg source="#source-15729-15800">臭いので直ぐ化けの皮が現われたという話である。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-15800-16156">越後の魚野川は、雪の山から出てくるのであるから、小出町付近で釣れる大鮎はさぞかしと思われるが、大したものではない。地盤の構成によって、川床に敷く石が小さいためもあろうが、水温が非常に高いので硬いのである。また、鮎特有のアノ香気が薄い。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-16156-16591">越中国の神通川の上流、裏飛騨の宮川の大鮎は、土地の人の自慢の一つであるが、水温と水質の関係で、皮がこわく、骨が硬かったのである。この川に大きなはやが数多く棲んでいた。巣の内の宿で出してくれたが、味は上等とは思えなかった。この魚を飛越線の鉄道工事に雇われている鮮人の細君が、川の浅い所へ伏せ</seg><ruby type="furigana" rend="right" source="#source-16591-16659"><rb><g ref="#gaiji-4-2-83-37" source="#source-16591-16650">笯</g></rb><rt>ど</rt></ruby><seg source="#source-16659-16671">を置いて</seg><ruby type="furigana" rend="right" source="#source-16671-16683"><rb>漁</rb><rt>と</rt></ruby><seg source="#source-16683-16787">っているのを見たが、鮮人の婦人は何でもやるものだと思ったものである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-16787-17128">ところが、表日本の長良川の上流、上の保川や吉田川、飛騨川（越中にも飛騨川というのがある）の鮎は水温が低いので、上等の食味を持っているのである。これらの川の岩質が、鮎の好きな上質の水垢を発生させるのに、適しているからであろう。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-17128-17532">越後の海へ注ぐ阿賀の川の支流、只見川も鮎では有名な川である。宮川のそれよりも一層こわく、肉がやわらかである。殊にアノ香気と風味を、全く持っていない。名前倒れの川であることを我々釣り仲間が行って知ったのである。やはりこれも、水温が高いのと、川底が平凡であるからである。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-17532-17636">川は小さいといいながら興津川の鮎が尊ばれるのは、このせいであろう。</seg></p>
      <p style="text-indent: 1em" rend="first-line-indent(1)"><seg source="#source-17636-17750">こんな、取りとめもないことを書いて、学者や、物識る人に笑われるであろうか。</seg></p>
